Be careful when picking they are elderberries, there are lots of berries in the UK that are not meant to be eaten so make sure you do thorough research first!

The longest part of this process is taking off the berries, make sure to only use the black ripe ones and do not eat any uncooked. The odd red one won't matter but be sure not to include any green ones. I have heard you can make this process quicker by freezing the whole stalks then knocking them off but i wanted to keep mine fresh :)

I added my fresh berries to a pan, after a little rinse, with a little grated ginger and distilled water. I used a water to elderberry ratio of 1 cup of berries to 1 cup of water. Bring the berries to the boil and then simmer for 20 minutes.

Strain the juice into a container, pressing the berries with a wooden spoon to get all the juice out!

Then add sweetener I personally don't like things very sweet so just added half a cup of coconut sugar. If your not going to add enough sugar to preserve then you must keep it in the fridge.

Happy foraging! Please take responsibility for your own foraging and be aware some items can look similar and not be safe to eat. I love using plant identification apps but always cross reference :D

GREAT post @ultravioletmag!! It's such a great remedy and soooo versatile (and ummy). It even makes a really great healing cocktail with a large splosh of vodka and some plain soda water. 🍹 Thanks for sharing the how to. Will less sugar affect the shelf life?
